New England Style Clam Chowder

- 1mediumturnippeeled and diced (280 g.)
- 1cupwater
- 8oz.bottled clam juice
- 2Tbsp.butter30 g.
- 4Tbsp.cream cheese60 g.
- 1servingBaked Potato Keto Chow
- 6.5oz.can of chopped clamsdrained (185 g.)
- 1celery ribchopped
- 3slicesbaconcooked and crumbled
- 0.5tsp.minced garlic1 clove
- Salt to taste
- Pepper to taste
- 0.25tsp.xanthan gumoptional
Boil the turnip pieces until soft and a toothpick will easily slide into them, roughly 15 minutes. Drain the turnips and set aside.
In a medium sauce pan, combine water, clam juice, butter, and cream cheese over medium heat until butter has completely melted and cream cheese has mostly melted.
Add the Keto Chow and blend with an immersion blender.*
