Low Carb Fruit Gelatin

- 0.25cupheavy creamcold ,2 fluid ounces
- 0.25cupwatercold
- 2.5teaspoonsunflavored gelatin powder1 standard packet
- 1.5cupswaterboiling
- 1serving Strawberry Keto Chowor any fruit flavor of your choice
- Liquid stevia to taste, optional
- 0.5cupmixed berriessuch as diced strawberries, blueberries, raspberries, or blackberries
Place the heavy cream in a mixing bowl with 1/4 cup cold water and sprinkle the gelatin over the surface. Let the gelatin soften for two to three minutes.
Stir 1 1/2 cups boiling water into the softened gelatin mixture until all the gelatin is dissolved.
Mix in the Keto Chow and sweeten if desired with a few drops of stevia.
Stir in the mixed berries and divide among four small bowls or containers.
Chill overnight to set.
Gelatin cups can be stored tightly sealed in the refrigerator for up to a week.
