Keto Refried Beans

Equipment

  • 1 Strainer
  • 1 Potato masher
  • 1 Whisk

Ingredients

  • 3Tbsp.bacon fat
  • 0.25cupfinely chopped white onion1 oz.
  • NaNoz.can black soy beansdrained*
  • 1servingSpicy Taco Soup Keto Chow
  • 0.25cupwarm water

Instructions

  • Heat a non-stick fry pan over medium-low heat. Add the bacon fat to the pan.
  • When the bacon fat is warm, add the onion.
  • Cook the onions in the bacon fat, stirring occasionally, until they are soft and starting to brown.
  • Add the drained soybeans to the onions in the pan.
  • Mash the beans with the potato masher until the beans are pureed.
  • Scrape off any bean skins on the masher, and add them back to the pan, or remove them from the masher and discard them for a smoother texture.
  • Continue cooking the beans until they begin to look slightly dry.
  • Stir in the Keto Chow in the water.
  • Add the Keto Chow to the beans in the pan.
  • Cook, stirring regularly until the water has evaporated and the bean puree looks thick and slightly shiny.

Notes

*Can also substitute with dried beans, which would need to be covered and soaked for 6-8 hours and cooked at a simmer for 6-8 hours.
