Here’s a great way to add some greens to your day. This is a mix and match recipe, so you can use your favorite greens and herbs to make it your own. Get creative and have fun with it. Cook up a different garden soup every time you make it. It’s a great way to use up small amounts of fresh greens, herbs and broth leftover in the fridge. For instance, I used chicken broth, arugula, parsley, dried dill and lemon juice for the soup pictured here, but you could use vegetable broth, baby spinach, fresh cilantro, dried basil and a dash of your favorite hot sauce for a completely different creation.
1teaspoonlemon juice, apple cider vinegar, or a dash of hot sauce
1tablespoongrated parmesan cheeseor Romano cheeseoptional
Instructions
Bring the broth or water to a simmer in a small sauce pan over medium heat or in a microwave safe container in the microwave
Add the greens, herbs, salt and pepper to the hot broth.
Add the Keto Chow and blend with an immersion blender until the greens are completely pureed.
Add the avocado oil, olive oil and lemon juice or vinegar and blend until emulsified.
Stir in the cheese (if using) and enjoy.
