Keto Coconut Bars

Great for when you're on-the-go or for a late night snack, these keto coconut bars are similar to that favorite coconut candy bar of yours. These bars are especially great for those on the keto diet. Recipe courtesy of Victoria Jensen.
Ingredients
Fudge Layer
- 1cupChocolate Keto Chow
- 2 1/2Tbsp.cocoa powder
- 1/2cupunsweetened almond butter
- 1cupwater
Coconut Layer
- 2cupsunsweetened shredded coconut
- 1/4 cup almond flour
- 1/2cuppowdered sweetenerSwerve
- 2servingsVanilla Keto Chow(or 2 scoops)
- 1/2cup water
- 1/4 cup coconut oil
- 1/4cupslivered almonds
Instructions
- In a medium mixing bowl, combine Chocolate Keto Chow, cocoa powder, almond butter, and water. Mix until smooth.
- Press 1/2 of the fudge mixture into a greased 6×6 pan.
- Melt coconut oil and combine in mixing bowl with coconut, Vanilla Keto Chow, sweetener, almond flour, and water. Mix until smooth.
- Press coconut layer evenly on top of fudge layer.
- Top with slivered almonds.
- Cover coconut layer with remaining fudge mixture and top with the rest of the almonds.
- Chill for at least 2 hours. Cut into 12 bars and serve.
