Equipment

  • 1 4 quart stock pot 1x recipe fits in 4 quarts, 2x fits in an 8 quart stock pot

Ingredients

  • 2tbspavocado oil
  • 2lbpork sausageregular
  • 1/2onion chopped
  • 2clovesgarlic
  • 2jalapeño pepperschopped, with seeds removed
  • 2poblano pepperschopped
  • 2tbspchili powder
  • 2tspcumin
  • 1/2tspcayenne pepperVERY optional
  • 1tspsalt
  • 115 oz canned diced tomatoes
  • 115 oz pumpkin puree
  • 18 oz canned diced green chilis
  • 1 1/2cupchicken broth
  • 1servingPumpkin Spice Caramel Keto Chow1 scoop or 1 packet
  • 1/2cupheavy cream
  • 8ozcream cheese

Instructions

  • Heat avocado oil in a large pot. Add sausage and cook through, breaking up the meat as it cooks. Drain off extra fat.

  • While the sausage is draining, add the onion, garlic, jalapeno peppers, and poblano peppers to the pot and cook until the vegetables are tender.

  • Add sausage back into the pot with the vegetables. Sprinkle with the chili powder, cumin, cayenne pepper, and salt.

  • Stir the tomatoes, pumpkin puree, and green chili peppers into the mixture.

  • Mix Pumpkin Spice Caramel Keto Chow into the chicken broth. You can use an immersion blender, mixer, or whisk. You'll want to do this to break up any clumps. Our preferred method is to use a shaker bottle with 3/4 of the broth, then after mixing and putting the mixture into the pot, you can rinse out the bottle with the remaining broth. Mix really well and then stir into the pot.

  • Reduce heat to low and add the heavy whipping cream and cream cheese to the soup. Stir well until the cream cheese is melted and everything is heated through.
    1/2 cup heavy cream, 8 oz cream cheese
  • Serve hot and enjoy!

Notes

The recipe as stated is fabulous – so craveable! It is flexible, though, if a lower carb count were desired.
