Combine half a cup of heavy cream and the Keto Chow in a large mixing bowl.
Beat with an electric mixer set up with the whip attachment, until all the Keto Chow is dissolved.
Add the remaining one and a half cups of heavy cream, stevia, and vanilla extract, mix on low speed to combine, scraping bowl down with a rubber spatula to be sure all the Keto Chow mixture is incorporated into the cream.
Turn the electric mixer up to medium high and beat the cream until it is light and fluffy and almost doubled in volume. The cream will hold stiff peaks when the whip is removed from the bowl.
