- 1mediumturnippeeled and diced into (approx. 1 1/2 cups or 280 g.)
- 2cupswater
- 2Tbsp.butter(30 g.)
- 4Tbsp.cream cheese(60 g.)
- 1servingBaked Potato Keto Chow
- 1/4tsp.xanthan gum or 2 Tbsp. additional cream cheeseoptional
Optional Toppings:
- Bacon crumbles
- Shredded cheddar
- Thinly sliced green onion
- Saltto taste
- Pepperto taste
Boil the turnip pieces in a small pot until soft and a toothpick will easily slide into them, roughly 10-15 minutes. Drain the turnips and set aside.
In a medium saucepan, combine water, butter, and cream cheese over medium heat until butter has completely melted and cream cheese has mostly melted.
Add the Keto Chow to the pan and blend with an immersion blender.*
Add half the turnips and blend with an immersion blender. Add the rest of the turnips and simmer for 5 minutes, adding salt and pepper to taste.
Load with your favorite toppings.
*Optional steps if you want the soup thicker:- Add 1/4 tsp. xanthan gum and blend in, or
- Add an additional 2 Tbsp. of cream cheese and blend in, or
- Add half of the cooked turnips and blend in.
