Preheat the oven to 350°F and set a rack to the center of the oven. Line a baking sheet with parchment paper.
In a large mixing bowl, mix the almond flour, Keto Chow, erythritol, coconut flour, baking powder, and salt.
Add the cubed butter and cut it in with a pastry blender or rub it in with the tips of your fingers until the mixture has the consistency of rough sand.
In a separate bowl, beat the egg, then mix in the heavy cream and vanilla extract.
Stir the egg mixture into the dry ingredients, until it starts to hold together. Gently press it together until it forms a ball of dough. Separate the dough into four, equal-sized pieces and shape them.
Place the dough on the baking sheet with at least two inches of space between them.
Place them in the preheated oven and bake for 15 – 20 minutes, until they are golden around the edges and starting to brown on the bottom.
