Place the cottage cheese, lemon juice, heavy cream, and basil in a large bowl and stir together.
Add the Keto Chow and mix well until completely combined into the cottage cheese mixture.
Add the chicken, bacon and green onions.
Cover the bowl with plastic wrap and put in the fridge – preferably overnight – to let the flavors meld.**
Slice the top off the bell peppers and then slice in half lengthwise. Remove all the stem, seeds, and septa from each half.
Lay the halves for each pepper side by side and lay a small lettuce leaf (or two) in each half.
On one lettuce-lined half, lay a slice of Swiss cheese and on the other pile spoonfuls of the chicken and bacon salad.
Put half with the cheese onto the half with the chicken bacon salad, securing with a wooden toothpick if necessary.
