Heat oven to 350°F. Oil an 18 x 13” baking tray (or line it with parchment paper).
Mix the chicken, egg, cheese, Keto Chow, Italian seasoning, garlic powder, sea salt, black pepper, and cayenne pepper together in a large mixing bowl.
Scoop the mixture into 15 portions, about 1 tablespoon each. Roll them between your palms to shape them into balls.*
Place the shaped meatballs on the tray.
Place the tray into the center rack of the oven.
Bake until beginning to brown on the bottom where they are touching the tray, about 20 minutes. They should look set and have an internal temperature of 165°F when tested with an instant read thermometer.
